چکیده
Maize is the principal source of food for millions of people, particularly in Latin America and Africa. It is nonallergenic and mild in taste, and is therefore suitable for use as a basis for weaning food. Probiotics are live microbial feed or food supplements, which beneficially affect the host by improving its intestinal microbial balance. The first recorded probiotics were fermented milks produced for human consumption. Since then, probiotics have been increasingly included in both fermented and unfermented products. A fermented probiotic maize porridge with high energy density and low viscosity was prepared by scientists at Department of Food Science, Agricultural University of Norway, Norway, using maize flour and barley malt. The porridge was fermented with four probiotic strains (grown separately): Lactobacillus reuteri, L. acidophilus (LA5 and 1748) and L. rhamnosus GG. These strains were inoculated at two levels; to obtain approx. 7 or 6 log cfu/g in the porridge at 0 hour. The porridge was Fermented probiotic maize porridge

Glycemic responses to maize flour stiff porridges prepared using local recipes in Malawi.
Glycemic index is defined as the incremental area under the blood glucose response curve of a 50 g carbohydrate portion of a test food expressed as a percent of the response to the same amount of carbohydrate from a standard food taken by the same subject. This study investigated glycemic index of maize stiff porridges consumed as staple food in Malawi and a large majority of other countries in...

متن کاملMeals and dephytinization affect calcium and zinc absorption in Nigerian children with rickets.
Nutritional rickets resulting from calcium insufficiency is common in Nigeria and high dietary phytate is thought to inhibit calcium and zinc absorption. We compared the effects of a high-phytate meal and enzymatic dephytinization on calcium and zinc absorption in Nigerian children with and without rickets. Nineteen children with rickets and 15 age-matched control children, aged 2-10 y, were gi...
متن کاملMaize porridge enriched with a micronutrient powder containing low-dose iron as NaFeEDTA but not amaranth grain flour reduces anemia and iron deficiency in Kenyan preschool children.
Few studies have evaluated the impact of fortification with iron-rich foods such as amaranth grain and multi-micronutrient powder (MNP) containing low doses of highly bioavailable iron to control iron deficiency anemia (IDA) in children. We assessed the efficacy of maize porridge enriched with amaranth grain or MNP to reduce IDA in Kenyan preschool children. In a 16-wk intervention trial, child...
